Serves 2
Ingredients
- 400 g broccoli (roughly 1 head), cut into small florets
- 1 large handful fresh basil leaves
- 1/2 cup Brazil nuts (soaked overnight)
- 2 garlic cloves, crushed
- 1/2 cup extra virgin olive oil
- 1/2 lemon (juice and zest)
- 1/2 cup water
- 1/2 tsp salt (sea, Himalayan, rock)
- black pepper, freshly ground
- pinch of turmeric (optional)
- 10 g Brazil nuts, raw and chopped, to garnish
Steam the broccoli over a pan of boiling water for around 10 minutes, until it starts to soften but is still a vivid green. Place all the ingredients in a blender or food processor and pulse until just blended. Taste it. Add more olive oil or water if it feels too dry. Taste again and season with salt and freshly ground black pepper if needed.
Serve over steamed broccoli. Drizzle with some extra oil and sprinkle with crushed Brazil nuts. You can also add buckwheat pasta, quinoa, or hemp seeds.
If you’re not vegan/vegetarian serve with an egg, fish or meat.
